On a cool and rainy New Years Day, what better to do than crank up the oven, and prepare a feast! This is our no-fail way of preparing the Gardein Holiday Roast so it is perfectly moist inside, with a nice browned crust outside. Great with roasted vegetables, our Pan (Water) Sautéed Kale with Beets, Apple Cranberry Sauce, and baked kabocha squash. What a feast!
I love Saturdays. I get to go gather at the market, and replenish my supply of fresh produce, and pick up a couple fun treats. We scored today with a fun new find, and enjoyed a great day of simple, but light meals. Happy New Year!
